"The American Institute for Cancer Research says that diets high in tomatoes are associated with a lower risk of cancers of the prostate, stomach and pancreas. Their beneficial ingredient lycopene, is more readily absorbed by the body when tomatoes are cooked", like in Geulah's. (Lifescope Winter 2006)
Harvard University researchers found that men who ate at least 2 meals a week containing tomato products lowered their risk of prostate cancer by 24% to 36%. Here's how lycopene works: "An antioxidant of the carotenoid group, lycopene prevents so-called "free radicals" from binding with oxygen, a combination that can damage healthy cells. Studies have shown that as blood levels of lycopene increase, free radical levels decrease. By cooking tomatoes, more lycopene is released, and by adding a little oil, such as olive oil, to your recipe, it's easier for your body to absorb the lycopene" (Prostate cancer education council June 2005)
